Plain Yoghurt in Spicy Soup

Today I made another of my ‘pot luck’ soups…where I put in whatever veg etc I’ve got around.Today that was carrots, onions, celery, garlic, kidney beans and lentils. I season soup with whatever takes my fancy….in this case it was black pepper, paprika and a teaspoon of curry powder…..

Well it turned out, unsurprisingly, to be a rather spicy soup….a tad too spicy….so it called for a little cooling down.

I decided to stir in a large tub of plain thick low fat yoghurt to tone it down, after it had cooled a bit.I added a dash of lemon juice on each serving.

It was absolutely delicious….creamy and yummy and filling
